Description

Penne for sauces that simmer for a long time

For a ragù that has simmered all afternoon, you need a pasta that holds up. Divella's Penne Candela, tubes firm to the bite, collect the sauce inside and keep it to the last mouthful.

What you will taste

  • Texture: firm and slightly resistant to the bite.
  • Aromas: warm wheat, slightly earthy.
  • Taste: straightforward and neutral, it leaves all the room to the sauce.

How to use it

  • With a long-simmered Neapolitan ragù.
  • As an amatriciana, with guanciale, tomato and pecorino.
  • As a gratin: tomato sauce, mozzarella and basil, baked in the oven.

Where it comes from

Divella was founded in 1890 in Rutigliano, in the province of Bari, in the heart of Apulia. Francesco Divella first built a flour mill there; pasta arrives between 1910 and 1920, and the family still runs the company. In 2020, the Italian Post Office celebrated its 130 years with a stamp.
