Description

Large ridged penne for sauces with body

With a thick ragù, a classic penne gets lost under the sauce. Pennoni rigati are larger, with deep ridges: they stand up to an amatriciana or a gratin, and each bite keeps its chew.

What you will taste

  • Texture: firm and fleshy, real resistance to the bite.
  • Aromas: durum wheat, a warm cereal note.
  • Taste: round, the sauce settles in the ridges.

How to use it

  • As an amatriciana, with guanciale and pecorino, keeping a ladle of cooking water to bind.
  • With sausage and mushrooms, or a long-simmered beef ragù.
  • Baked with béchamel and scamorza: the ridges hold everything.

Where it comes from

Divella is a house from Rutigliano, near Bari, in Apulia. It all began in 1890 with Francesco Divella's flour mill; pasta joined the production between 1910 and 1920. The Divella family still holds the company.
